- Procedemos primero a hacer el ADOBO, para hacerlo 3 o 4 chiles anchos, limpios de semillas y rabos se remojan en agua hirviendo, se muelen en la licuadora con 1 pizca de orégano, un chorrito de vinagre, un diente de ajo, sal y pimienta y se cuelan en una cacerola y se reservan
Ponemos a cocer uno o dos huevos y cuando estén duros los pelamos y reservamos. - Tenemos preparada nuestra carne molida para hacer unas ALBÓNDIGAS. Para hacerlas necesitamos medio kilo de molida de res o de cerdo o de ambas. En una cacerola con un poco de aceite doramos, sólo a que se ponga transparente, dos cucharadas de cebolla picada unas 4 o 5 ramas de perejil picadas y dos cucharadas de pan y ésto se lo añadimos a la carne. Le ponemos también un diente de ajo picadito, sal y pimienta. Por separado en un platito picamos un chipotle adobado en cuadritos.
- En otro platito picamos la clara de uno o dos huevos duros. Vamos tomando un poco de carne para ir formando cada albóndiga y en medio les vamos poniendo un pedacito de nuestro chipotle y un pedacito de huevo, hecha la bolita la vamos soltando en el adobo. Deben cocerse al menos durante 20 minutos.
Se pueden acompañar por un arroz al lado y desde luego con tortillas.
