Esta es una receta original que me encontré buscando que podía hacer que no fueran las clásicas: lasagna o pizza de berenjenas. - 1 taza pan rallado más lo que uses para rebozar
- 2 claras
- Ajo triturado
- Sal y pimienta a gusto

- Empezamos cortando en láminas las berenjenas y dejándolas en reposo con un poco de sal por 30' para que larguen el "amargor". Luego las lavamos y secamos muy bien con papel de cocina. Las ponemos en la plancha con un poquito de aceite hasta dorar los dos lados. Dejamos entibiar.



- Una vez tibias las ponemos en la procesadora junto con el pan rallado, el queso, el ajo, la sal y pimienta y trituramos hasta que quede una pasta homogénea, lleva un ratito no desesperen. En otro recipiente le agregamos las claras y mezclamos bien. Solo resta armar las bolitas y rebozar. Tip: si se mojan las manos antes de hacerlas es más sencillo. Yo preferí cocinarlas en el horno unos 25' hasta dorar (hay que darlas vuelta) pero si prefieren pueden freírlas.
